Great question! A large percentage of commercially available yerba mate is processed using drying methods where the harvested mate leaves have direct contact with smoke throughout the process. While this drying method produces a distinct smoky flavor profile that is often associated with yerba mate, the direct contact has the adverse effect of producing Polycyclic Aromatic Hydrocarbons (PAHs) that may be detectable in the finished product.
For that reason, Guayakí’s yerba mate is processed using air-dried methods that utilize indirect heat sources; a process that Guayakí has been an industry leader in innovating. Our unique air-drying process reduces the potential for PAHs in our mate as compared to 100% wood-dried mate.
Our loose leaf, mate bags, cans, and bottles are made with 100% air-dried mate. Guayakí loose leaf and 75ct. yerba mate bags with a ‘best by date’ of March 25, 2024 or later are made with 100% air-dried mate.
