About our Guayaki Yerba Mate Cafe
We love serving yerba mate. It’s our passion to share the experience of this sacred plant with everyone and visiting our mate cafe in Sebastopol is a beautiful way to experience our finest work in person. There you can enjoy freshly prepared yerba mate, incredible organic food, colorful art, and the warmth of our community.
Our cafe is located at our headquarters in Sebastopol, CA and is part of The Barlow; a beautiful community of fine wine makers, food producers and artisans. The vibe is relaxed and open. The front of the cafe is a great place to sit, eat and enjoy the company of friends, and the Aché Room is a perfect for relaxing, sipping mate with a large group, working on a project, or experiencing art in so many different forms. We host a variety of performers and musicians, locals and travelers, those with spirit and a story to share.
We’re as dedicated to our food as we are to our yerba mate: Organic, locally sourced, high-quality, artisan meals. Light and healthy, gluten-free, wheat-free and vegan options are all available.
And of course, our sustainably, fair trade, organic yerba mate, in every and any way you can imagine: mate latte, cappuccino mate, mate mocha, mate chai, spicy mayan mocha mate, mate shake, espresso shot, iced mate, and mate drip brewed, among other offerings.
The sacred art of the cebador: Serving yerba mate
Enjoying yerba mate from a gourd and bombilla is a key experience at our mate cafe, and we’re on hand to help you understand and deeply enjoy this ritual.
You can enjoy mate solo or with a group -- and if you have a group with you, you’re ready for a gourd circle!

The cebador/a, or mate server, prepares mate for friends, drinking the prepared gourd first to test the waters and relieve any initial bitterness. After the cebador/a finishes the first round, it’s refilled and passed counter-clockwise with the bombilla, or straw filter, facing the recipient. Each person drinks the entire gourd, which is returned to the cebador/a after that last audible sip with the bombilla facing them. The process is repeated until the mate is lavado, or flat.
Tomando mate, or drinking mate, inspires openness between those in your circle. The nourishing power of the mate encourages a communal spirit, and as the gourd is passed around, you can’t help but feel a deeper sense of connection.
